I first tasted this drink at a Mangalorean restaurant, and it had me addicted. As if tender coconut water wasn't good enough, this preparation spikes it up further, turning it into an absolutely delightful, healthy drink.
Ingredients:
4 glasses tender coconut juice
8 tbsp tender coconut flesh
tsp lime juice
6-8 tsp honey (to taste)
4 Mint leaves
4 Holy basil leaves
Method:
- The coconut must be quite tender for best results, and the flesh should be thin and soft. Blend the flesh along with the juice.
- Add lime juice. Add honey based on the sweetness of the juice. Blend.
- Pour it into glasses and add crushed mint and holy basil leaves.
- Garnish with a small piece of tender coconut flesh and serve.
