Ingredients:
1 can (400 grams) condensed milk
1 ¼ cup plain flour (maida)
1 cup grated carrot
1 tsp baking powder
½ tsp soda bi-carb
½ cup melted butter or margarine
1 tsp vanilla essence
Method:
- Sieve the flour, baking powder and soda bi-carb together.

Beat together the condensed milk, melted butter and essence.

Add the grated carrot and beat well.

Mix in the flour mixture slowly and beat well.

Pour the mixture into a greased and dusted 6" diameter tin.

Bake in a pre-heated oven at 180°C for 40 minutes or until a toothpick inserted comes out clean.

Cool and serve. It goes well with custard, and tastes even better when a day old.
