Makes 1 cup
Ingredients:
¼ cup tamarind, deseeded
1 cup jaggery, grated
1 tsp chili powder
2 tbsp date syrup (optional)
Salt to taste
Method
- Wash the tamarind
- Boil the tamarind, jaggery, chili powder, salt and 4 cups of water and simmer for 15 minutes.
- Cool and strain the mixture through a sieve.
- Add date syrup, mix well and serve.
Note: To make a quick tamarind chutney, substitute the jaggery with ¼ cup sugar. Soak the tamarind in warm water for 10 minutes and extract its juice. Mix it with sugar, salt and chili powder and serve.
